Ingredients:
- 1 tbsp olive oil
1 lb mild Italian pork sausage, casings removed
2 garlic cloves, minced
½ cup drained jarred roasted red peppers, sliced
1 can (14.5 oz) crushed tomatoes
¾ cup low-sodium chicken broth
1 package (16 oz) shelf-stable potato gnocchi
3 cups baby spinach
¼ cup grated Parmesan
Optional pinch of chili flakes
Method:
- 1. Heat oil in a deep large skillet over medium-high. Crumble in sausage and cook 6–8 minutes until browned and a food thermometer reads 160°F.
2. Stir in garlic for 30 seconds. Add peppers, tomatoes and broth; bring to a gentle simmer.
3. Stir in gnocchi, cover and cook over medium-low for 5–7 minutes, stirring halfway, until tender according to package guidance. Add broth if too thick.
4. Fold in spinach and cook 1–2 minutes until wilted. Finish with Parmesan. Taste before adding salt because sausage and Parmesan are salty.
At the table: Serve with cucumber salad. Put chili flakes on the table for adults. Turkey Italian sausage can replace pork; cook turkey to 165°F. For a vegetarian variation, replace sausage with a drained 15-oz can of cannellini beans, use vegetable broth, and choose vegetarian-rennet Parmesan or omit it.
Leftovers: Refrigerate promptly up to 3 days; reheat to 165°F with a splash of broth.
Table note: One pan, familiar flavors, and a proper supper after the last whistle.
Serving Ideas
Serve warm in shallow bowls with extra grated Parmesan and a side of toasted garlic bread.
Swaps & Variations
For a vegetarian version, use plant-based sausage crumbles and vegetarian-certified Parmesan. Swap spinach for kale for a heartier texture.
Storage & Reheating
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium-low heat with a splash of water or broth to loosen the sauce.
